To be clear, you sound like an amazing hammie owner!! Please take all of the following advice I'm the helpful spirit in which it is offered. Given the issues you describe, I suspect that there is some possibility that she is in her "breeding prime" and she is not happy about the fact that she can smell the hamster that she was recently fighting with in her "territory". I think the solution may be to place her in a different room away from his smell. If possible, also put her into a fishtank with mesh top and that will solve the chewing on the bars issue.

That’s possible! I can’t put her in a different room, but my room is very big so I can move her to the other side if I need too. Thank you for the advice

I forgot to mention, she also only seems to do these behaviours when she sees or hears me. It’s almost like she wants attention but wants to bite me and escape at the same time. It’s so weird.

It sounds like you've done so much for her already! I'm sorry this is going on. Do you think she might thrive from having a larger enclosure? I know the Prevue meets the requirements of space and bedding depth, but wondering if Peach needs more? Maybe she needs a larger space to run and even deeper bedding? I know chewing on the bars can be really damaging to their teeth :( Do you think a large bin cage would be better? Then she wouldn't have bars to chew!

I’m not sure to be honest. She’s done well for so long, I’m not sure why she isn’t using her wheel as much lately. Maybe from old age. I don’t have room for a bigger cage in my room unfortunately. Her cage is literally on top of her brothers. I was going to let her run around in the empty bathtub with some toys tonight and see if that helps. Worst case, I’ll look into making another bin cage that’s a similar size. The prevue has an upper level which adds a little more space which I like. That’s where she goes to chew on the bars mostly and run around.

Is it getting hotter or warmer where you are? Sometimes warm temperatures can make hamsters more lethargic.

Yeah it’s summer here and it’s been 30 degrees C almost every day. She tends to do this all year round though. I keep my room as cool as possible with the shades drawn all day for them. :) she has been a lot more active in the day lately

Only suggestion I have is they might need a bigger environment with more depth, I’m not sure on the dimensions of your cage but usually wired ones are roundabouts the minimum recommended amount, so maybe she needs more than the minimum which wouldn’t be uncommon! Also if you had them together for months and had 0 babies then you either have 2 males or 2 females

What size cage would you recommend for her? I can only afford to make a bin cage right now but I have almost all the materials

As big as you can go! Minimum is 450sq inches of floor space for a dwarf

One thing you can try is stuffing some bedding or toilet paper in your sock for a couple hours and then shred it up and give it to her. She might use this as nesting material, and this will make your scent seem more "normal' to her.  Also, if you get nipped, try wiggling your fingers. I recall taming a young hamster who nipped me, and I touched her. She paused and stared, then reached out and nipped again. I touched her again. I swear that at that moment the hamster looked totally astonished!! It was like the wee light bulb went on in her head and she finally realized that I was a living thing, and that I could and would respond to her!! LoL!!

I’ll give that a try! She seems to only try to escape the cage and bite the bars when she hears my voice. I think maybe she is bored so I’m looking into getting a larger bin cage for her. She is 2.5 years old but still very healthy. She doesn’t run on her wheel much anymore so maybe she needs more room to run around.
